This one is really good, and my favorite thing about this kind of meal is you can add and subtract ingredients as you/your guests prefer. So here we go:
8 boneless chicken thighs (trust me they're better than breasts for this-and cheaper) salt and pepper (I use kelp salt for less sodium) oil chopped onion chopped sweet peppers 2 -4 cloves garlic (you pick) 2 tsp cumin 2 tsp coriander 1 tsp paprika 1 tsp hot smoked paprika 1 tsp oregano 2 TBSP adobo sauce (this is the sauce in a can of chipotle peppers, you can add a chopped chipotle if you want a lot more spice) 2 cups chicken stock 1 package tostadas (buy from the Latin market! They're worth it!) sour cream lime cilantro beans jalapeno radish pomegranate chopped tomato chopped lettuce cheese Preheat oven to 400. Salt and pepper the chicken. Lay 4 of them out in a hot, oven safe pan (I use my dutch oven) brown on each side. Transfer to a plate and do the other 4 thighs. remove chicken add onions and peppers. Scrape the crunchy bits while you brown them. when they are about translucent add garlic and stir until fragrant. Add all spices. Stir and then add chicken stock. Stir well and add the thighs back in. Place in the hot oven for about 45 minutes. While the chicken is braising make your toppings. Take sour cream and add lime zest and juice and some chopped cilantro. You can add a pinch of sugar is it's too tart, but I like that flavor. Quick pickle some THINLY sliced jalapeno and radish with 1/2 c red wine vinegar and a tablespoon-ish of sugar. Boil that together to melt the sugar and remove from heat. Then add radish and pepper.Le cool. This will keep forever! (really good on avocado toast in the morning) Chop: cilantro, tomato and lettuce. Pop the seeds out of a pomegranate. I know that's weird but I love that tart pop against the spiciness. When the chicken is done, remove it from the oven and break apart with 2 forks. Now you're ready to build on the tostada. Enjoy!

AuthorI'm not a chef. I have no training. I just really like food. I grew up eating processed food and over time, as a grown up, decided I wanted to cook the kinds of foods I got in restaurants. I have one problem. The doctor put me on a low sodium diet. You'll find there very little if any salt/sodium in this recipes. Just add to your own taste. I will probably do things wrong/differently on this website, but hopefully we'll all learn from each other! Archives
