Last night for dinner we had grilled kabobs with a sweet mustard marinade. (that'll be a different post) This morning for a low carb breakfast I used the leftover vegetables and made an unctuous quick meal!
1 egg 1/2-1 c pregrilled vegetables- I had onion, red pepper and yellow squash (we ate all the mushrooms last night-wah) hot sauce Cover your egg with water in a sauce pan and put on high heat to boil. Add a pinch of baking soda to the water for peeling. Once boiling I go 5 minutes for my perfect doneness. Soft boiled, still gooey in the middle. More time for hard boiled, less for runny. While that's going chop the vegetable chunks. Heat up your saute pan and add a sploosh of olive oil and your veg. Toss them until hot. When your egg is done drop it in an ice bath to stop the cooking and peel or split the egg. I tend to split mine in half and dig out the egg with a spoon. Faster and less frustrating. Put the veg in a bowl and crumble the egg over top. Sprinkle with hot sauce and enjoy. This breakfast satisfies everything. There's enough carb sugar in the veg to make you feel like you're cheating. Enough fat in the egg. The veggies are sweet, the sauce is hot. The grill taste is smokey. You can load up on veg for a fuller belly. It really was a perfect breakfast! Enjoy!

AuthorI'm not a chef. I have no training. I just really like food. I grew up eating processed food and over time, as a grown up, decided I wanted to cook the kinds of foods I got in restaurants. I have one problem. The doctor put me on a low sodium diet. You'll find there very little if any salt/sodium in this recipes. Just add to your own taste. I will probably do things wrong/differently on this website, but hopefully we'll all learn from each other! Archives
