The boys come over every Tuesday to "watch baseball" and they are less than adventurous eaters. I try to make things that are good, but "normal" Last night was my first try at wings. Sal has trouble with spicy so there's no kick in the recipe. That comes in the sauces you use.
30 wing drumettes (I think the other parts are useless) 1 tbsp garlic powder 1 tbsp dried mustard 2 tsp cumin 1 tsp coriander 1/2 tsp ginger 1/2 tsp turmeric 1/2 tsp kelp salt (probably less with real salt) 1/4 tsp black pepper zest of several clementines (it's what I had lying around) Mix all of the spices and dust all the wings. Cover and refrigerate for a couple/few hours. Preheat oven to 400 and spread wings out on a baking sheet. Bake for 1 hour flipping the wings at 30 minutes. Meanwhile take: the juice from the clementines fresh chopped garlic 2 cloves 1 tbsp olive oil 1 tbsp red wine vinegar and cook it down on the stove to make a glaze. Simmer until it thickens and looks glaze-like. When the wings come out, serve them with sauces. We had the orange glaze, Sriracha, Franks traditional Buffalo Sauce, and various Christmas gift hot sauces. I think I nailed it!

AuthorI'm not a chef. I have no training. I just really like food. I grew up eating processed food and over time, as a grown up, decided I wanted to cook the kinds of foods I got in restaurants. I have one problem. The doctor put me on a low sodium diet. You'll find there very little if any salt/sodium in this recipes. Just add to your own taste. I will probably do things wrong/differently on this website, but hopefully we'll all learn from each other! Archives
