Not pizza with eggplant on it. Pizza ON eggplant. I needed an appetizer for friends with allergies. We had low sodium, gluten free, diabetic, low carb. All the greatest hits. Here's a fun easy recipe that is satisfying and yummy!
1 large eggplant cut in 1/2 inch slices Olive oil or cooking spray salt and pepper Parmesan cheese tomato sauce-homemade, canned or your favorite jarred sauce- I used no salt canned plus 1 1/2 tsp oregano, basil, garlic powder, coriander, and 1/2 a tsp hot pepper flakes mozzarella cheese Preheat the oven to 250. Slice eggplant and lay out on a parchment covered cookie sheet. You will likely need 2 sheets. Brush with olive oil or spray both sides of the eggplant. Salt and pepper to taste and dust with Parmesan. Bake 30ish minutes until the eggplant gets crispy but before it start to burn. Remove from oven, raise oven temp to 400 and spoon a dollop of sauce on each slice and add a large pinch of cheese. Bake until the cheese melts. Serve!

AuthorI'm not a chef. I have no training. I just really like food. I grew up eating processed food and over time, as a grown up, decided I wanted to cook the kinds of foods I got in restaurants. I have one problem. The doctor put me on a low sodium diet. You'll find there very little if any salt/sodium in this recipes. Just add to your own taste.
