Yes! It deserves 3 exclamation points!! I decided to go all out for Father's Day Brunch since Dorey and Nick are back. (Domenick will follow tomorrow) This was amazingly good!
6 slices of bread- we have a new love affair with Pepperidge Farms Light 7 grain bread. It satisfies both my low cal/low sodium/whole grain requirement, and Chris' childhood love of white bread. Use any bread you like but less dense/healthy bread is better. Goat cheese Fresh fruit cut to small uniform size- we had strawberries, blueberries, and black berries 2 eggs Butter Good maple syrup or confectioners sugar... or both Beat 2 eggs in a dish large enough to hold 6 french toast rolls. Use a rolling pin to flatten the bread. Crumble goat cheese on the end of the bread farthest from you. Cover the goat cheese with chunks of fruit. Roll the bread toward you to make a jelly roll. Gently lay the roll in the egg. Once all 6 are soaking in egg turn them to the opposite side to make sure all sides get egged. Move to the refrigerator for at least 30 minutes. When you're ready to cook, heat your griddle pan (or regular frying pan) to medium heat. Add a tablespoon of butter lay the french toast rolls gently in the butter and cook about 4 minutes per side or until it turns a nice golden brown. Cook on all 4 sides turning gently so the roll up doesn't fall apart. Serve with a drizzle of maple syrup or sprinkling of powdered sugar!!

AuthorI'm not a chef. I have no training. I just really like food. I grew up eating processed food and over time, as a grown up, decided I wanted to cook the kinds of foods I got in restaurants. I have one problem. The doctor put me on a low sodium diet. You'll find there very little if any salt/sodium in this recipes. Just add to your own taste. I will probably do things wrong/differently on this website, but hopefully we'll all learn from each other! Archives
