I was looking for something fun to do with pork chops the other night and remembered that Sam had gifted us some Bourbon Maple syrup from his Vermont trip. The recipe just grew from there.
3 thick cut boneless pork chops 1/4 cup bourbon maple syrup (actually any good natural maple syrup-or you could try Log Cabin but don't blame me) 1/4 cup dijon mustard 1/4 cup red wine vinegar 1/4 cup olive oil 3 cloves garlic finely chopped 1 sprig rosemary finely chopped Mix all ingredients in a large ziplock and add pork. Seal it and refrigerate for a 2 or 3 hours. When you're ready to cook, bring the bag out and let it come to room temperature. At this point you could grill it outside, or, since the weather wasn't great, I used a grill pan on the stove. Cook sufficiently on both sides the pour leftover marinade over into the pan and let simmer for about 5 minutes. Remove pork and let rest. Raise the heat slightly and cook the sauce down until thickened. Pour sauce over pork and enjoy. So good!!!!

Welcome back! In the chaos that we create each day, I keep forgetting this site is here. Chris and I are both trying to shed some pounds in 2019. We’ve been trying for years, but we’re taking it more seriously right now. That said, Reid wanted pizza for dinner so I had to make it something we could eat too. Here is a version that was really good. You need to eat it with a fork but the elements of pizza are there for very few calories or fat grams!
½ head of cauliflower 1 cup mozzarella cheese 1 egg ½ tablespoon Italian seasoning Tomato sauce- we make our own for the sake of the sodium Various toppings- we used spinach, mushrooms, Roma tomatoes, and turkey pepperoni Preheat oven to 425 Chop the cauliflower and run through the food processor until it's consistency of rice. Put in a microwave safe bowl and nuke for 8 minutes. Let cool and then wrap in cheese cloth or towel and squeeze all the liquid out. Mix cauliflower, egg, ½ cup cheese, and Italian seasoning. Press “dough” onto a parchment lined sheet to make the crust. Bake until the top is lightly brown. Now it’s just pizza! Add toppings and cheese and bake until cheese melts. Add hot pepper flakes to make up for the lack of salt. YUM!!! |

I have one problem. The doctor put me on a low sodium diet. You'll find there very little if any salt/sodium in this recipes. Just add to your own taste. I will probably do things wrong/differently on this website, but hopefully we'll all learn from each other! Archives
