You know how you get a craving for pork? Yeah, last night was that night. I made a "barbecue sauce" to go with it and it was pretty delicious. Here goes:
Pork tenderloin 1 1/2 teaspoons fennel seed 2 teaspoons fresh rosemary 2 teaspoons coriander 1 teaspoon garlic powder 3/4 teaspoon Kelp salt (or kosher salt) freshly ground smoked pepper corns (or regular black pepper) olive oil 1/2 sweet onion sliced 3 cloves garlic 1/2 can tomato paste 2 tablespoons sugar 1/2 c red wine vinegar Preheat oven to 425 degrees Grind spices in a mortar and pestle and rub on the tenderloin. Heat a skillet and brown the onion in olive oil. Add garlic and stir until it becomes fragrant. Add tomato paste and stir to combine. Add sugar and vinegar. Bring to a boil and reduce heat. Simmer until it begins to thicken. Remove from heat. Heat an oven safe pan. (dutch oven) Add olive oil and sear pork on all sides. Brush some sauce on pork and roast in the oven for 15-20 minutes. Remove tenderloin and let it rest for 5 minutes before slicing. Serve with remaining sauce.

I have one problem. The doctor put me on a low sodium diet. You'll find there very little if any salt/sodium in this recipes. Just add to your own taste.
